Pear and buckwheat pikelets

Jonah wanted pancakes this morning and I had frozen all the bananas (they ripen way to quick in the heat). I did have some very ripe pears in the fridge too so I came up with this which he was more than happy with. Pronounced them “scrumptious”.

Serves 1 hungry Jonah (I would double this next time so the rest of us could get a look in)

1 medium sized ripe pear (the kind that are too messy to eat without juice dribbling down your chin), core and seeds removed. Skin can be left on.
about 1/2 cup buckwheat flour
about 1/2 cup soy milk (or other non dairy milk)
about 1 tsp baking powder

Put all ingredients in a blender of some sort (I used my spice mill but you could probably use a stick mix or similar) and blend until smooth.

Spray a small fry pan with spray oil.

Fry small laddle fulls on medium heat until edges cooked and middle starts to bubble (about 1 minute or so), flip over and fry other side about 30-40 sec until cooked.

Serve – Jonah likes his with frozen blue berries. Sorry no photos – they disappeared too quickly!!!
