1/2 large cauliflower plus water used for steaming it (about 1/2 – 1 litre???)
handful raw cashews
1/4 cup (to taste) nutritional yeast (leave out if you don’t like it)
2 round teaspoons massel stock powder (vegan / GF one)
cracked black pepper to taste.
Steam cauli in required size pot. Allow to cool slightly once it is tender. Reserve cooking water.
Put nuts / nutritional yeast (if using), spices, cauli and cooking water into blender (in batches if necessary depending on blender size). Blend until smooth! Season further to taste if desired.
Alternatively add spices, nutritional yeast and presoaked nuts (could probably put them in the water used for steaming the cauli while you wait for it to cool) to the pot with the cauli and use a stick mix to blend.
