Orange linseed and buckwheat pancakes

I think I have set a new benchmark (oh dear) and the kids wanted pancakes for breakfast again…..this time I was out of bananas and pears so I thought I would see what oranges would do…..Orange you glad I did? The kids seemed to be. This recipe made 8 large pancakes which would serve 3-4 depending on how hungry people are. The kids had theirs with fresh mango which seemed to be a good combo.

Ingredients: (just put everything into the blender and blend until smooth or us a stick mix in a large jug to achieve the same)

2 T flax meal

8 T water

1 cup soy (or other non dairy) milk

1 cup buckwheat flour

1 orange (zest and flesh)

1 t baking powder

1 t cinamon

1/2 t ginger

1 t turmeric

Optional (but I used all):

1 t maca powder

1 t psylium husks

1 t LSA (linseed, sunflower seed, almond) meal

If you prefer a sweeter pancake you could serve with maple syrup or add a sweetener of choice to the batter.

Spray pan and fry into 12 cm diameter pancakes flipping when bubbles form and then cooking on other side for another 30-45 seconds or so.11009094_10153035160480272_4826071446228328130_n11018918_10153035160400272_2351719193781448151_n
